Our first collection of lunchbox ideas has been so popular, I decided maybe we all could use a few more ideas, so here is the 2nd edition! I’ll start with a cute smiley face sandwich I made for The Well-Fed Son’s lunchbox on his first day of preschool:
I know it is nowhere near as creative and fun as some of the other ideas I’ve seen and shared, but it’s a start… and it was a hit with him, which is the most important thing! Sure makes you feel good when your child requests something again that you had created just for him. 
Here’s the recipe for this super easy sandwich:
- 2 Sandwich thins
- peanut butter
- jelly
- 2 M&Ms (I used peanut butter M&Ms)
- dried cherries (or can use other types of dried fruit, like raisins or cranberries)
- Using a butter knife, spread peanut butter over bottom sandwich thin.
- Using a small spoon, heap small amounts of jelly onto top sandwich thin and spread across the thin using the back of the spoon.
- Lay top thin with jelly onto bottom thin and press gently.
- Press each M&M into the top of the sandwich thin for the “eyes” of the smiley face.
- Using dried cherries, create the mouth in the shape of a smile and press into the thin.
