There are crockpot recipes, which are easy and convenient, and then there are easy crockpot recipes, which are “no-brainer” easy and convenient.
The difference, as we see it, is that all crockpot recipes reduce your time in the kitchen, since the crockpot does most of the work for you, but with the easy crockpot recipes, the crockpot does everything but a little prep work for you. This week’s recipe is one of those.
The original recipe, Easy Peanut Butter Chicken, is a crockpot recipe from the blog, A Year of Slow Cooking by Stephanie O’Dea. We adapted it slightly by using cashew butter instead of peanut butter for several reasons: First, because our daughter is not yet old enough to have peanuts; and secondly, The Lucky Wife has a relatively strong sensitivity to salicylates. So too much peanut butter for her can equal feeling tired and sluggish. Not good. Especially when you’re trying to keep up with a toddler and a preschooler. 
This was a great recipe. The Lucky Wife liked it a lot and both The Well-Fed Son and Daughter liked it also. We will be having it again for sure.
IMPORTANT NOTE: While it is generally not recommended that children as young as The Well-Fed Daughter (who turns 2-years-old this week!) consume nuts at all, we discussed the possibility of her trying certain nuts sooner than the recommended age. With our food sensitivities and limitations because of them, we needed some other protein options for her, if possible. So under the supervision and advice of our Nutritionist, she has been eating some nuts with no problems.
