Does your family have special Christmas traditions that you look forward to each year? Why or why not?
Today we are sharing a Beef Curry Recipe that became a part of our family’s Christmas traditions several years ago on The Chef’s side of the family.  The first year we ate curry for our Christmas meal together, the decision to have curry was made after a discussion about having something different than the usual ham or turkey.
Christmas comes so soon after Thanksgiving, so we were thinking it would be nice to try something besides what we’d had just a month ago. We enjoyed it so much that it became a tradition. Here’s the recipe if you’d like to try it at Christmas or any other time:
- 3-4 pound bottom round roast, cut into half-inch cubes
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 8 ounces sliced baby bella mushrooms
- 1 can diced tomatoes, drained
- 1 tablespoon curry powder of your choosing
- cooked Basmati or Jasmine rice
(Condiments):
- diced tomatoes
- diced bell pepper
- chopped scallions
- pineapple tidbits
- raisins
- sliced almonds
- coconut flakes
- potato sticks

Heat oil in a large stockpot over medium heat.
- Add diced onions and saute until translucent.
- Add sliced mushrooms and saute until soft.
- Add diced, canned tomatoes and curry powder. Stir to combine thoroughly.
- Add beef and brown on all sides.
- Add water to cover and bring to a boil. Reduce to a simmer and simmer for approximately 1-2 hours or until beef is tender.
- Taste and add salt, black pepper or more curry pepper if desired. (NOTE: This can be served as strong or as mild as you like.)
Serving suggestion: Spoon generous portion of rice on the plate. Ladle beef and gravy over rice and have guests sprinkle whatever condiments they prefer over the beef.
(NOTE: The picture shows many possible condiments to be eaten with the curry. We normally serve them in ramekins buffet-style.)
